Because Carbs Can Be Overrated…

Soooo carbs – there are good ones and bad ones and many people don’t know that. People think all carbs are the devil. No, those are just the ones we crave the most! Fibrous carbs are actually good for you and include foods like artichokes, broccoli, and eggplants. However, if you are trying to limit or even eliminate the starchy and sugary carbs (pastas, white rice, white flour, etc) there are options for you. We have all heard about the new phenomenon with noodles made from vegetables. Be honest, some of you were like “don’t try and play me and tell me that’s pasta because I’m not paying it!” Then there are those that are willing to try it but are still skeptical. However, there are those like me who say “let’s see what the hype is about!”

I bought a spiralizer and went to town and made my first zucchini noodles. I was a novice at the time so they were okay. Then I realized they are like a lot of vegetables and take on the flavors you cook them with. I started making noodles out of carrots, sweet potatoes… I even spiralized cucumbers for a salad. Recently, I traded my spiralizer for a Veggie Bullet and built the most amazing meal – Chicken Stir-fry! Yes…that’s my vision board in the background!


I took some chicken breasts (you can use boneless skinless thighs as well) cut them into thin slices and seasoned with sea salt, pepper, ginger, garlic, turmeric, and onion powder. I cook the chicken in sesame oil in my wok. Once done I pulled it out and started on the veggies. In the stir-fry I added red onions, mixed bell peppers, mushrooms, snap peas, carrots, and the zucchini noodles. Obviously you can’t leave out the soy sauce (Braggs liquid aminos can be substituted). It’s sooooo good and surprisingly hearty!

I will let you in on a tip. Once you make the zucchini noodles, put them in a colander and sprinkle with sea salt. Let them sit for at least 20 minutes before using. This helps draw out all the water so that your noodles hold up in the stir-fry and the leftovers still taste amazing! So the next time you have the opportunity, experiment. I’m not saying go out and buy and spiralizer now (undercover I might be…lol) but they sell them premise and many stores now so grab a pack!! There are so many options and they can be used as a substitute in any pasta dish!
