So over the past week, my food creation wheels have been turning. I’ve been trying to think about things to eat that are innovative, easy, filling and still taste amazing! I started making a list and then I paused. What about cupcakes? We always associated cupcakes with dessert, but why be limited to a sweet treat. How about a savory bite?!
Winter in New England can get cold…really cold at times. The first thing I think about during this season is comfort foods – casseroles, hearty soups, stews, chilis, etc. food that sticks to your bones and just makes you feel warm! One of those foods for me is meatloaf. I don’t do it often, but when I do, it’s so so good! Why not take all the goodness from a meatloaf dinner and pack it into a cupcake??? That’s exactly what I did
For these beauties, I used ground turkey for my meat of choice. Packed it up with veggies and used soy sauce, Worcestershire sauce, ketchup to add moisture along with a variety of herbs and spices to add lots of flavor! You take your meat mixture and fill up lined cupcake tins to the top and toss it in the oven. While they were cooking I made my mashed potatoes. For this version I used less milk/cream and added chicken stock instead also added a little thyme which I don’t do for my normal mash. Once everything was done, I piped the prepared potatoes onto each cupcake and voila! You can serve with a side of veggies and add a little cheese to the top for your “sprinkles”. The options are endless. I put a dalop of barbecue sauce on the plate under each cupcake prior to serving…amazing!!!!!
