So being a wife, having an infant, working full time, and going to school seems like a lot but add a couple more other activities and the load can leave you with no spare time! I was inspired by a friend to start these “Sound Bites” to help you get through these close to unbearable times! They may be long, short, or somewhere in between; but, they are guaranteed to help alleviate some of that everyday stress. Can face it, we can’t all make a 3-5 course meal all the time!
This sound bite I am going to give you something so versatile you’ll never get bored – Shredded Chicken. Guess what else…minimal ingredients and minimal work! For 6 cups of shredded chicken, you will need the following:
– 4 boneless skinless chicken breasts
– 1/2 cup of chicken broth or stock
whichever you have
– poultry seasoning (if you don’t have
poultry seasoning, you can make it
using thyme, garlic powder, onion
powder, rosemary, and pepper
– dash of salt
Just season the chicken well and place it in a crock pot. Then pour the broth/stock into the pot. Cook the chicken for 4-6 hours on high. Take the chicken out and use a fork (or forks whichever your preference lol) and start pulling the chicken apart to shred it. There you have your multipurpose poultry!
I share this with you because now that you have made this, you can have all types of meals from this one batch. If your family is big just double or even triple the batch! You can now use this meat for
– chicken wraps
– chicken salad
– BBQ pulled chicken
– buffalo chicken dip
– chicken soup
– pasta dishes
And a myriad of other appetizers and entrees. Not only that but you can bag it up into meal portions and put in it in the freezer for use for future quick meals! What would you use your shredded chicken for???
