Sound Bite: Pancake Batter

I don’t know about you, but when those weekend days start approaching, a nice hearty breakfast with my family is one of the things I think about. Sometimes it’s waffles and bacon, sometimes grits and cheese eggs, or sometimes it’s a beautiful stack of pancakes with a side of sausage! My son loves my pancakes and this sound bite was inspired by him. Everyone makes pancakes. Whether it’s homemade, semi-homemade, or just using a “complete” mix, they are made in just about every household. Why not turn those pancakes into muffins?

Sounds weird but it’s really awesome and really easy. Just make pancake batter like you usually would. Pray a mini muffin tin and pour the batter into each cup almost 2/3 full. Let them bake in a 425 degree oven for about 10-12 minutes. You can add chocolate chips, blueberries, bananas, or whatever you like. Not only are these a great breakfast if you are on the go, but they are super kid friendly! The little ones will gobble them up!!
